Hello

I sold my Z and bought a jeep, spent a gross amount of money modding it. Long story short I'd like another Z.

What year would you get?

What bolt ons would you get and who do I contact for a tune?

I'd really like to keep mods simple and high quality. I want to keep it NA and have the best sounding exhaust.

First, I would suggest you take some time and dig through the forum. Everything you've asked has already been explained multiple times over.
Second, "the best sounding exhaust" is too subjective. Loud? Deep tones? Racy? Single exit? Dual? Again, it's all been discussed before, with sound bites.
Do your due diligence and come back with specific questions, and you'll get a lot more, specific, responses.

Or, go to one of the 370Z specific shops online and buy out their bolt-on catalog.

I’d focus more on the condition of the car versus year. I had a ‘09 and traded for ‘13. No major issues with either, except the ‘13 is a M6 and the csc went out.

Totally agree about finding one in good condition^ so many of the Z cars I see for sale look like they were modded by a 3 year old. Look for one with regular maintenance and if it does have modifications already, make sure the owner is knowledge about the stuff on the car and that the aftermarket stuff is a reputable brand.

The last thing you want is a modded car with a sh*t ton of issues from crappy parts or poor installations.

When I was looking for a Z, I wanted the facelifted version, due to improved aesthetics, removed faults like steering wheel fault, galley gaskets faults, and maybe some others. Ended up buying a '09 in mint condition with less than 10k on the clock. Fixed these faults preventatively and am super happy with my decision.
Go for the best low mileage example you find, everything else can be upgraded to your preference.

I have decided to make my Z an awesome street car. I have not put money into it for a while but it runs great and it only has 66,000 miles on it. I am planning on spending 25 to 30k over the next couple years and keep driving it as a daily driver. It has a Fast Intentions exhaust with the extra long resonators. It is too loud for me, I may change the catback to Borla or just replace the mufflers with Borla Pro XS 18” oval on the FI system. I want to make it smoother, faster, and quieter, only loud when pushed. I plan on buying TEIN Flex Z, Kinetix suspension kit and Whiteline sway bar & End Links. Repainting 40th Anniversary with front lip side skirts and rear diffuser and new lights. I plan on buying Topguns supercharger kit. I need to be emission compliant where I live, we do have 93 octane and E85. I need to improve the sound deadening to reduce road noise, it has a good stereo that is hard to hear when rolling. Any suggestions to make it the ultimate street car are welcome. Edit, after seeing and hearing the Borla Catback on Z1 exhaust shootout it is off my wishlist. I did really like the HKS catback and may sell my Fast intentions catback.

For tuning, go see Seb at Specialty Z. Especially since you’re in CA.

DIY section has A LOT of mods to look through. Also, the Member Gallery shows a whole bunch of different builds that you can pick and choose mods you like.

2014 and up to have the best chance of galley gaskets being intact. I used both Seb. and Eugene Turkov of Infiniti Care and prefer the latter. You may PM me if you'd like to know why.

As far as Jeeps, I lightly modded one in the late 1990's and the prices then were outrageous, can't imagine what they'd be now but IMO not worth it.
