is Z1 the only place that sell a built diff? or is there any place in ohio can put the diff core in the car?

Most places don't sell whole diffs because it's not practical to ship all that weight around.

A competent shop should be able to do the work for you. For peace of mind, make sure they have done them before on a 370Z.
