Does Nissan use the same KAD (gun metal metallic) for all the models of cars it's offered on? For example is the KAD the same on a Senta as it is on a 370Z.

Can't say about Nissan, but I used to own a KAD '13 G37xS Sedan and currently own a 2013 Nismo KAD Z and both were identical paint shades

Yes, the paint codes are the same across the different Nissan models
