After I wash the exterior, I hand wash the engine bay with a dedicated sponge to get away most of the dirt. I then use a trickle spray from the hose to rinse. I've done every one of my cars like this since 1984 and have had zero issues with water intrusion.
If you want, you can start the car afterwards and let the heat of the engine dry it completely...
