It depends on the oil, but realistically, for a synthetic, creeping up over 280* F is getting risky at full tilt (sustained high load). The odds of actually seeing shearing and loss of significant lubrication probably won't happen much before 300* F tho'.
Limp mode kicks in well before there's any chance of damaging the motor. Too cool (insufficient lubing) is really anything below about 150* F. Beating on the motor is best saved until at least 170* F. Ideal is hovering around 200* F give or take 20* F.
