You need more pressure at very high speed because as you go faster there is more heat generated in the sidewall, you need the extra pressure to reduce the heat generation from sidewall flex. In doing so you are also reducing the load capacity of the tire (after a certain point) and reducing the amount of grip available from the tire. The numbers I quoted give you maximum grip.
