Here is a question on a squared 20X10.5 setup- besides fitment who much power is really lost by doing this?

I never bothered to look into these details because theoretically, what one loses in power, one gains in traction and aesthetics. It depends on the rotational weight of your wheels and tires. All negligible IMO unless you're competing. If you do compete, you don't use your 20" wheels, do you? For what it's worth, I dyno'd my old 350Z on the OEM 18" wheels and tires first, then installed 19" TE37s with 255/285 tires. The numbers were identical.

Finally about to get wheels but want to make sure I'm not going too wide. Driving a 2016 Nissan 370Z nismo with stock 9.5 front and 10.5 back. Would 20x10 front 20x12 back be too much while trying to maintain a flush with the ground set up. Don't know much about offset

Fronts depending on tire size / camber specs should be around 20x10.0 +22 or higher. Rear should be around 20x12.0 +20 or higher.
