Default UpRev question from newbie

There are very few 370's in my country and the whole tuning issue is way behind modern times. I just installed stillen headers and high flow cats and in a month from now the full akropovitch system. My dealer got an uprev license but he really doesn't know much about the tuning aspect. We decided to bring in a professional tuner who is experienced with tuning just no experience with uprev tunes. Could someone please tell me the do's and don'ts. I want to get the best tune for my money. What should he be adjusting? Is there a list? Also he asked if the ecu has a memory/safety function that recalibrates certain parameters back to stock a couple hundred km's after a tune. For now the car is using a standard tune that uprev sent in accordance to my mods. I failed to mention that my car is AT. Is there any calibrating to do to increase torque with the AT? Thanks guys.
