Anyone running a finned oil pan for track days? I'm considering buying one (for my 350z) but, honestly, they don't seem worth the time or money. Any comments?

Finned pan won't do anything except waste your money buying it, waste your time installing, and waste your energy wondering if it's working. It won't do anything helpful, especially since the undertray covers the oil pan.

does anybody know if the stock oil pan is baffled to make sure there is no oil starvation? is there an aftermarket pan that helps keep the oil evenly throughout the engine during high speed turns?

The AM performance oil pan is best solution as it addresses real issue related to oil starvation. If you are serious both AM Performance oil pan and an oil cooler are required.
