I feel like such a newb in full auto when the flash pops up when I don't want it to.

You can disable the flash popping up on the 60D, even in Program mode.

Well I just ordered the 60D and 430EX II. They'll be here tomorrow. Now I can not know what I'm doing with two cameras and a really bright flashy thingy.

I read that you are supposed to bounce when you use the flash.

Just remember, flash reflects color, so as long as you're white, you should be fine bouncing it off your face....
