Running with a 25 row oil cooler would this require a different oil viscosity rating?

Default Running with a 25 row oil cooler would this require a different oil viscosity rating?

Since 5w30w oil viscosity rating is recommended for the Z.
Is having a oil cooler would require for you to change the viscosity rating of your oil?
Since having the oil cooler my oil temp is always at 160F and with hard driving it only goes up to 200F. I know the normal operating temp should be at 160F.

This winter/cold season I run only at 140F even at hard driving would this be bad on the engine if running on a 5W30W easter based oil rating?

In the winter you should use aluminum sheet to block some of the cooler to keep temps at optimum.
