Still, this is disheartening.

maybe that means that all non-Sport models will be automatic and you have to get the Sport pkg in order to get the 6 spd manual.

OR

current base and touring models (non-Sport) with manual transmission, do they have the SRM system or not? maybe if they don't, they are only offering the 6 spd with SRM, Sport pkg or not...

It doesn't say sport, it says touring... so base models with the sport package still won't get a 6 spd. Not sure what the rational is here TBO.

The current roadster models are roadster, roadster touring, roadster touring with sports package. I couldn't even get the roadster base with sports package when I bought my car. I don't get the rationale behind why this is. Is it because Nissan thinks roadster buyers are able to spend the extra $6k if they want the sports package?

Could be worse. In Canada and a few other countries, you can't buy a "base 370z". Such a beast doesn't exist in those regions.
