Looking to get new wheels
And I was wondering about offsets. Will any offset work or is there only one compatible offset. Sorry if this is a stupid question, but I cant really find a straight answer. Thanks

You're trying to get the rims to be as close to the edge of the fender, without rubbing during hard cornering. The offset is the distancce from the centerline of the wheel to the mounting surface of the wheel. A positive offset is where the mounting surface is closer to outside of the rim. A negative is where the the mounting surface is closer to the inside of the rim.

Wouldn't a -ve offset be important so that the spokes of the wheel can clear the calipers, especially the sport package calipers? Is there a minimum offset necessary for clearance issues?

offset and caliper clearance aren't mutually inclusive. you can't judge whether it will clear the caliper just by offset. It also depends on how the spokes are shaped and how thick the main wheel mounting pad is. That is what makes it so hard.

in fact offset has nothing to do with caliper clearance - it is all about the mounting pad height as Mike mentioned
ultimately, clearances are determined on an as-specific-wheel basis |

the ae performance 370 has ce28n with 12mm offset and spacers in the back so with something that aggressive i would think you could fit just sbout anything under the wheel wells without worrying about caliper clearance.
