Anyone have a recommendation on a low profile jack for a Z that is lowered with coilovers? I want to do more of my own stuff.

I have coilovers, too. The rear is no problem to get under with a conventional low profile floor jack. Mine is 2" at lowest position. It is still too tall to get under the front end though. Get a couple of pieces of scrap lumber, like 2"x4" and place them in front of the front tires, then drive up on them like ramps. Then you'll be able to get your jack under the front.

Kinda pricey but I bet this would work. 1 1/3 inch minimum clearance
