6'4" and I think I know what you are talking about, spend a good 20 minutes playing with the seat position and all the dials to adjust. I finally found my perfect driving position and any time someone moves it I worry I will not be able to reset it.
On your original questions, yes there are seats. Bride has a line call 'low max' which offer a lower seating position than most stock seats. For the 370z many of the 'low max' line will give you 1-2" drop, I know the Bride Stradia Low Max will give about 1.5" more room lower the driver.

When I put a helmet on (Im 6'3"), is the only time I have plenty of issues getting into a comfortible position.
I dropped the seat to it's lowest position on day one, but I am curious abot this Bride Stradia Low Max seat. I am going to look into this. How does it compare to the comfort of my current seat?

For a comparison, I am 6'4" at 200lbs with a 34-35" waist and fit very comfortably in the seat but you cannot have anything in your pockets. If I remember I will try to grab some pictures next time I am around the car.
