You would probably be a lot happier with a car with more low / mid range torque like a BMW 335i or Audi S4. The cars feel fast even at 2000rpms and you won't have to rev the engine to the moon to get moving and feel the rush.

Or the old Can Am cars that would qualify at 1500 hp but turn it down to 1000 for the race.

As you said you dont want to harm your engine then shift it to 6th
Or just stay on 3rd whole time and say good bye to the engine in couple month(maybe even less)

Oh dont forget about oil temp
Evenwith cruise on "6th" gear gets high temp And redlining allday will get even more oil temp and practically same as running with out oil(you know what this means) Good luck

What you should do is always drive in reverse. Not only this would keep the car's RPM pretty high (on the highway), it would add a whole new dimension of excitement.
Just make sure the VDC is on and you are good to go buddy!
