Carbon fiber mirror covers, carbon fiber door handles, carbon B-Pillars, carbon fiber hood, carbon fiber roof, carbon fiber exhaust, carbon fiber seats, carbon fiber gauge covers...

I always wanted to do a full carbon fiber swap on my old 350. Farthest I got was CF hood and spoiler. I never wanted to do the roof though. Function over form, it would have just added weight and been ONLY for looks.
Once upon a time Seibon had a full center console replacement. It was very limited and pretty expensive, but it wasn't just an overlay. If I had the money, I'd do hood, fenders, doors, center console, spoiler and hatch. Expensive but would probably net you some weight savings.
EDIT: Oh and definitely the mirrors.

Any thoughts on the hot wheels carbon hood. Good or bad

I had the VSII style hood and I thought it looked amazing sitting in my living room. Once I finally put it on, I actually didn't like it as much. Although everywhere I went, I got compliments on it.

IMHO, its something you'd have to see in person and quite possibly from behind the wheel. I'll probably get one for my Nismo, but I'm just gonna do OEM style this time around.

Send or trade out your interior peices to Carbon Fiber Element. They do alot of our interior peices. They are a forum vendor. Do a search and check them out. I have several items done and they do good work. Some items they will do and send to you and then you send your parts back in trade, while some parts you will have to send in and get them back covered.
