You'll be fine without a tune, if anything it's probably running richer than it needs to be. So essentially you're not getting the most out of your mods without the tune but certainly not hurting the car. I have Z1 High flow cats, the FI exhaust, and Stillen Gen 3 CAI without a tune and I'm doing just fine for now.

Basically, you have the stock cats, right? Think like this.

You have a filter element in the stock cats. The HFC has a smaller filter element, allowing more gasses to get through. The test pipes have NO filter element, so gasses pass through freely.

The cats cause back pressure. Unless you are going FI, you don't want that.

Largely depends on who is in town. Last cruise we had seven because two, I think, were on deployment and one was ill. Could have easily topped 10. Typically about 5-6.
