The RJM clutch pedal was one of the best mods I ever did and I have an older version.

The dongle doesn't require any kind of programming, you shouldn't have any issues with a used one

My first exhaust was an AAM true dual exhaust. It performed well. Their's is way more expensive than the Z1. I think anything will be an improvement over OEM and I would not worry about the flex...
