This is the last step of the process for making potato chips in a food dehydrator:
Dry the potatoes for between six and 12 hours, or until the potatoes are brittle with no pockets of moisture left. The potatoes should be crispy enough that they shatter if you hit them with a hammer.

I was surprised how good turkey jerky could be. I thought it was going to be petrified chunk of crap at first. Not bad though.
