ok well here she is... tasted my first home brew
came out phenominal. and only at 2 weeks bottle conditioning. gonna let it condition for a few more days and see how it comes out

alrighty.
ok a lil info on it type: west coast pale ale abv: 3.7% fermintation time: 15 days bottle condition time: 14 days and counting right now (at 2 weeks bottle conditioning) it has great carbontation which i am a huge fan of. i'm hoping the extra bottle condition time wil add a little more head to really let the aroma out. I really like the taste, or rather the taste it can become. i think a few more days in the bottle before i cold crash could really do wonders for adding something to the flavor profile. as a west coast pale ale it is a pretty safe beer to start with, so as someone would imagine, its a perfect balance of sweet, with a hoppy finish. which i know sounds really general, but a lot of home brews come out overly cidery (too much sugar) or somewhat flat with a yeasty taste. right now, i really like the taste, but am going to give it another 1-2 weeks to let all the flavors really come through. currently have a blonde ale in the works, which i'm really excited to bottle and try i know a lot of home brew purists shun the Mr. beer kit, but if you really want to grasp the concept of brewing and try some different methods or try different ingredients get bold with some tastes, this is the way to go.

I love Flemish sours, very hard to come by unfortunately and expensive typically.
Beer Works in Boston did a pretty good one this year, draft only no bottles. A home brew friend made one and it came out amazing after a year of cellaring. They are apparently very difficult to make as you are deliberating introducing bacteria (normally the enemy in beer production).

Here in Atlanta I've got a couple things home-brewing. I like Brewers Best kits, and will try others soon also... but am also into shelf-clone kits from scratch as well. I make my own wine too. here is the list:
HomeBrew Beer Brewers Best - English Pale Ale (4~6 weeks to drink) Brewers Best - American Amber (4~6 weeks to drink) New Belgium Fat Tire clone - (4~6 weeks to drink) - For this, I had .5oz of extra bittering hops, so I just said what the heck - and tossed them in. I cant wait to try it. I love FatTire but always wished it had about 50the hops flavor. HomeBrew Wine White: Reisling (4 weeks to the glass and its perfect) Red: Chilean Merlot (6 weeks to bottle, 3 months+ age. I hope it drys some more during aging but it still tastes great) Everything I've made tastes just oh-so good. Sours are easy to find in Atlanta. I just had a Mikkeller Sur Munk (belgian quad and sour ale hybrid) and now I'm on a BFM Spike and Jerome's collaboration sour barleywine. Hail to the sour!
