Bacon took a beating in the 1980s, when dieting trends took aim at saturated fats and cholesterol. By the '90s, though, Americans were ready to indulge again. I was born in 1981. Bacon was a staple of my youth. A variety of family members had friends or farms nearby and always made sure we had fresh bacon.

These days I'm very particular about bacon I pay for at a restaurant. Most of it is overpriced and terrible quality. I'm always looking for new bacon options but my favorite ones are usually thick or cubed and coated in a spicy rub (like cayenne or chili powder) along with some form of sugar (brown sugar or syrups are common).

I like thick sliced smoked slab bacon sprinkled with salt but my heart and veins not so much.
