Ive been fortunate enough to have a contract land in my lap with a Major Health Care provider in Socal. It allows me to only work 3 days a week and still be able to pay my bills.
Actually its a godsend because Im able to visit my brother every other weekend in Arizona.

Creating a training program/procedural guideline for the QC dept at my shop. So far, it's coming along pretty well, but I'm definitely having the most issues when it comes to older employees who don't know **** about a computer. I've got an inspector here with 7 years experience at this company who has real issues renaming files, and copying them to a new directory.

I'm not sure how to get around this barrier short of pushing senior leadership for mandatory competence tests on this stuff prior to hiring.

As an alternative to requiring competence, you could offer an internship (non-paying, of course) and have the intern's job be to monitor and assist with the computer operations for those that need it

Perhaps include the Windows for Dummies book into the employee handbook!
Older employees? Shoot, Ive set up small clinics with new networks/servers and user credentials. After giving a little training on the absolute basics of logging into the network, I had to assign generic usernames because most of the Medical Assistants (early-mid 20's) complained that they had to remember too many credentials. Some couldnt even figure out how to minimize or close a window.
This created a nightmare for me as far as administrating network shares, rights, etc. Oh well, I charged by the hour.
