Food thread!

Next time I'm in Austin, I think I will try out Franklin's BBQ. Many say his is the best. I have tried Blacks and Stubbs. Me like Stubbs. Maybe do

It's a food thread but seems like I'm the only one ever posting food here. I know there are others that cook. I'm actually going to try and make a meatloaf soon. I'm not sure on WTF or how to make it. I just know I want it similar to B-Market but better!

Franklin's is an experience for sure. Gotta get there a couple hours early and wait in line to make sure there's some left. Some days are worse than others, although I actually haven't been in a couple years. We would bring chairs and coolers with booze and hang out in the parking lot for about 2 hours before they open.

Shortly before they open a staff member will walk through the line and get an approximation from everyone on how much meat they will be ordering. They would then put a sign up at a certain point in the line that tells people past it they might not get any meat. Every time I went the line was already well past that point when they came around. I think they open at 11 am and it's rare they are still serving at 1 pm.

FWIW, I feel like Franklin's is best because they only make as much meat as they can handle. I've got two friends that can smoke a brisket at least as good or better than brisket I've had from Franklin's. And that's not to say that other BBQ joints are bad by any means - I very much enjoy both Blacks and Stubbs. But I think the small batch thing just makes it easier to keep the quality consistently top notch.

Most of the decent BBQ places do one thing well enough to enjoy consistently. I really love Rudy's spicy chopped beef. Style Switch has excellent ribs. Stubbs has great sausage. I mostly already know what I'm ordering based on where we eat.

At Franklin's I tell people that have never been to at least try a very small bit of everything if they really want. But focus on the brisket - no reason to fill up on turkey or sausage. I usually get at least a few pounds of brisket just for myself. Even as leftovers it's still better than many places.

I pretty much refuse to order steaks when I'm eating out any more. Unless it's some fancy, overpriced steakhouse and someone else is paying. Even then I often find myself bitching about them being unable to properly cook a filet med-rare

I have never been to San Antonio but I love Rudy's dry rub and if I use BBQ sauce Stubbs is pretty good out of the bottle.
