i only got the front bumper done on my STI. the shape of the car determines where the rocks would hit. the nose of the STI is high so i doubt much rocks would hit the forward part of the hood. i did not get the mirrors done.
on a sunny summer day i would say 4-5 days for full cure time. in the winter it can take as much as 3-4weeks, longer depending on temperature. 
on my Z i did the front bumper, rockers, and the a-pillar. since u dd, i recommend you do the full hood too.
