Yeah, They tune your NOS timer so you'll run 9's. Otherwise you'll be unloading in third.

Generally its means repgrogramming(flashing) the factory ECU to change alter the stock settings related to Air/Fuel Ratio, Ignition Timing, electronic throttle control, speed and rev limiters, etc. UpRev is probably the most popular option for the 370z. You could also tune by replacing the factory ECU with a aftermarket standalone engine management and tuning that, but that is typically more money and hassle than it's worth.

So just to recap. With FI Exhaust, FI HFC, and Stillen Gen 3 intakes I will be good until I get a tune?

Exactly.. of course it's recommended.. but sometimes getting the $$ freed up to do everything you want takes time, and as everyone has said, you should wait for tuning until you've completed at least phases of bolt-ons, so you're not spending extra to re-tune at every step..
