The standard pulley that comes with the kit (approximately 8 PSI at sea level) is right at 3.125 inches (I have that one sitting here on my desk). The Stillen replacement pulley that provides around 9 psi of boost at sea level is right at 2.9 inches (that one is on my car now). I am thinking of swapping it out for something around 2.5 inches as I am at 5400 feet ASL here in the Denver area and am only able to make 7.2 PSI out of the 9 PSI puley. As you stated, Vortech has a good selection of replacement pulleys and 928 Motorsports also makes a nice selection of replacement pulleys. Good luck and I hope that you have the same good experience that I have had. The custom tune is definitely the way to go.
