This isn't my first rodeo, the manifold is supported in quite a few places on top of being made from sch.10 SS. The only reason the bracket shown exists was to support the turbo as I got started with the manifold. You could remove it completely and the turbo would go nowhere. The only reason I will be keeping it is because of the v-band exhaust housing. V-band flanges do not support weight as a T3 or T4 flange would. The weight focuses itself on one point on the radius and will eventually crack without an unusual amount of support.

Precision PT74 on my M-Roadster supported by the manifold only, 30k miles later, still right where I left it

This is exciting stuff. Good luck to you guys on the build and props for doing something new. Sounds like you run a great shop.
