I'd start by checking the coolant level when the engine has cooled down. When you remove the radiator cap, it should be pretty much filled to the brim. Also, your overflow reservoir should be between the Max and Min (fill to the Max when you're sure the rest of the system is full). If both of those levels check out, there is an air purge valve at the top of the radiator, passenger side. Have some towels ready to catch overflow, and then open the screw to the purge to ensure there's no air in there. If no coolant comes out, pour coolant into the radiator fill spout until there is overflow, and then close the purge. Run the motor for 5 min, shut it down, let it cool, and recheck the level in the radiator spout. Fill to full again.

If all that checks out, then you may have a bad water pump. Any CEL or codes when you scan the car?

The water temp gauge is ALWAYS one dot below middle once the car comes up to temp. It's also a terrible gauge and doesn't budge from that LED unless temps are WAAAAY off normal. You should be able to read exact coolant temps with a ScanGauge or similar to know where you really stand. Keep us posted.

This car is currently running DISTILLED WATER / and AN ADDITIVE to replace factory engine coolant. Could that be the reason why is doing this? There are no CEL's or anything.
