I am going to be gutting the inside (sound proofing with second skin materials) and was curious if anyone could help me with some tips on how to pull out the plastic panels without damaging them.

Most of the panels just pop off. You might have to give some a pretty good tug, but they should pop out.
My personal opinion though is to leave the interior in. Don't be surprised if gutting all of the plastics/carpet, etc. saves you less than 100 lbs. Especially if you are going to add sound deadening material. Unless you are building it for time attack or some sort of competitive motorsport its not worth it IMO.

sorry, I wasn't clear in my intentions fellas.
I am wanting to soundproof and reinstall the panels. The road noise from the tires is driving me crazy. I am not making a race car or track car. Weight is not a issue, so some second skin material for sound proofing doesn't bother me at all.
