I'm sure if I go with paint + clear coat it will hold up since this is what comes stock.

A good high-temp paint and clear coat would be your best bet.

I don't know what the finishing is on the stock calipers. It's something really tough though. I burn off the original costly on factory painted calipers before media blasting them, and all other brands of calipers, stock and aftermarket, the paint tur s to a fine ash. These don't. It burns off but still requires a lot of work to finish the media blasting, so nOthing will be as good as original, other than the hard anodizing that comes on stoptech trophy brakes.
PProfessionally painted will hold up finish wise, but may chip easier
