At idle my new 370 takes about 8 minutes to start to move the temperature gage and amost 15 minutes to get to 180, is that normal?

More metal means more time to get to temp. Did you have a smaller displacement car before? That could be the difference you are seeing.

Coolant heats up quicker than oil (it is meant to) plus the thermostat doesn't open on the block until a higher temperature so again it will heat up quickly.
