Water Temp Gauge: Where to mount sensor?

Where is the proper place to mount a water temp sensor? I've seen the pieces that come with a kit which leaves me to believe you have to tap somewhere

Where is the proper place to mount a water temp sensor? I've seen the pieces that come with a kit which leaves me to believe you have to tap somewhere (maybe the block).
