Don't get too worried about a few viscosity points. The difference between 75W and 80W isn't much (and, with tolerances considered, possibly zero). And you don't operate in the "W" range for very long.

Never trust a dealership - they acquired the moniker "stealership" for good reason. There may be some good ones out there, but I haven't found them.

I talked to a dealer service manager who lied to me about Nissan voiding my warranty if I used any driveline fluid other than the Nissan brand oils. When I started talking in details about the difference between the terms recommended and prohibited and the meaning of the API viscosity and protection level numbers he quickly shut up. He's now my "big friend" when I come in for service and makes sure that the service technicians do exactly what I would like on my car.
