Just wondering how accurate the OEM oil temp gauge is? Since installing a 25 row oil cooler last year my oil temp in cooler weather stays lower than 180 even

Since installing a 25 row oil cooler last year my oil temp in cooler weather stays lower than 180 even though i have a thermostatic plate.
