towards the last part when you said to turn on the engine and turn the heater on full blast, are you supposed to do that with the radiator cap off and the funnel in?

Yes and should be without problem. The purpose of this is to "burp" the system to purge any trapped air inside. Once this is done and the radiator appears topped off, check again frequently during the week to make sure the level is good. And to make no mistake in the 50/50 solution, just go to Nissan for their pre-diluted blue coolant.

what about the prestone 50/50 you can get at your local pepboys?
