Steering Lock: cut one wire. /switch optional

You can't unplug both ends of the existing car harness. You can unplug the plug from the steering lock but the other end is part of the wiring loom. Take a look and you will see what everyone is talking about.

As I said, you can do what you are saying, but you will have to do in the car with little room to play with. If the connectors were not available then I would do as you say, but then I'm good with a soldering iron and car wiring.
