Technically speaking from a performance standpoint I wouldn't go any lower than 1" from stock. Further than that and you start screwing with suspension geometry and you're more vulnerable to weird creaks and noises from the suspension as the suspension geometry gets worse. Also make sure your springs are pre-loaded properly and check to make sure all of the adjustment collars (gold things) are tight as well as the nut on the top of the strut that holds the top hat on. This can be accessed through the trunk under the plastics without removing the coilover, but you will have to remove the adjustment knob in order to get a socket on there.
