Does anyone recall seeing a site/company that sold brackets which allow the Akebono calipers to accommodate larger rotors?

I don't see why this couldn't be done. I did this in my Z32. I got Z33 track rotors and with a brack moved the calipers. Worked great since the calipers were great just the size of the rotors didn't provide the braking torque i needed.
