Stereo help.
I have a Polk Audio db1240 12in sub, and a 12 zenclosure box. What else do I need in order to run that to my stock head unit? I do not have the Bose kit. Any help appreciated.

It is not so much "right amp" as it is a quality amp as well as proper tuning.

an amp in the 300 to 500 watt range will do you nicely

I know the sub is at 320 rms. so should I look for an amp that ranges around 330rms? And is there different kinds of wiring kits? And any brands I should look for?

I saw it rated at 360 rms a general rule is amp should be between 80% and 150% of your subs rated power.
Amp kits are a crap shoot. Stick with the better known brands, and you'll get a decent kit. They are rated for your systems power, so look in that range as well. I would recommend installing a kit with at least 4 gauge power wire, which would give you the option to upgrade/add amps later.
