Computer in dash

Can you get a motherboard in that form factor with more than one M2 slot? A multiple boot option might be nice. I'd want Windows to be able to do

Default Computer in dash

Yes you use any mini itx board you like the one I used has one m2 spot you can also use ssd drives up to 6 sata drives
You can also buy a adapter card and plug in bus’s of another m2 slot
There are a lot of different mini itc mother boards out there I just used one for a amd processor I had and memory

The big ticket item is the custom power supply is the most important https://www.mini-box.com/M4-ATX?sc=8&category=981
This is what makes it all work

It has turn on and off by start and stop it tells the mother board to turn on and to shut down with out a hard stop will not drain your battery only run the power until the computer shuts down the the power is off
Plus you can set timers on the power supply to do a proper shut down all controlled from pc over USB

That is the most important thing

Plus has anti thump turn on for amps also remote turn on for amp

Finding a place to mount GPS receiver will be fun so it is hidden and don’t want it to stick out like a sore thumb
