Hi,
I have a touring sport roadster with the factory nav unit.

First question is if I buy an after market Multimedia Unit, can it be wired to work with the steering wheel buttons, volume control, .... ???

Yup, you will need to buy one of the universal steering wheel control adapters... the most popular in this community is the Axxess ASWC-1.

is the rear view camera also plugable ? and working with it?

Yeah they can put the rear view into another headunit. When I had my system put in they offered it, since my headunit supports cameras, but I liked it being in the rear view mirror (I didn't have the tech package so the screen's in the mirror). Installer said they'd have to do something about the voltage to make it work, but it's doable.

Also, they got the voice steering wheel buttons to work somehow. Other installers said it couldn't be done, but they did get my voice button to start Google Assistant (or whatever you'd want). Apparently the factory bluetooth module is in the trunk area, so they ran a wire back there. Again, this was in a non-tech car but I imagine it's the same.
