I plan on having Exhaust Depot, my local exhaust shop, making me a y pipe and high flow cats.

Heres the Y-Pipe: Infiniti G37

I talked to him about making me some high flow cats, and he said he would.

How much louder do you guys think my exhaust will get?

I've gotten exhausts from Hector (owner of exhaust depot) before and he does some really good work!
