I heard that 2008+ got much better steering, are you talking about your experience with a pre '08 Z, or the improved 08+?

Also heard about the clutch. There is a spring you can remove/replace which makes it a lot more involving. About 5 minutes of your time.

I would love the GS EXCEPT for the targa top. I am not into removable roofs. That is the only reason (besides the cheap-looking rims that look like GM got some chinese company to copy the 370Z's.) that I would not buy one.
