The 370Z keeps up pretty well with the 2011 Mustang GT 5.0 according to reviews like C&D, which isn't surprising given the weight difference. Overall I would prefer a faster and nimbler car to one with more horsepower, and I think the 370Z is that car.
Now, add a few mods and I wouldn't be surprised if the Mustang is faster, but it won't get lighter, and the Z can pick up a nice boost with some parts too.

0-140 for the GT happens in 24.6 seconds for the 'vert.
0-140 for the Z happens in 28.1 seconds.
0-130 for the hard-top GT is 19.8, and for the Z, 23.0.
This is a pretty big gap. 0-60 are similar due to the mustang GT's skinny tires, but the GT handily out-powers the Z in stock trim. With exhaust on the Z against a stock GT, they are probably very comparable.
