You might want to invest in a thermostatic plate to avoid driving on a cold motor- especially since cooler weather is right around the corner.
That's not to say that a thermostatic plate is the cure to your issues but it would definitely help. With most thermostatic plates, the thermo still allows 10% of the oil in the system to flow through the cooler as to avoid thermostatic shock from cold oil being introduced into the engine.
With a thermostatic plate if you're still unable to get up to operating temps, you should invest in a block-off plate.
