I can reach all the bolts with the car sitting level on the ground though, and I found an oil pan of sufficient capacity that will slide under there as well, so I think I'm all set for doing the change without touching a jack.

I'm planning on doing it this way as well. I can't get my head under there, but if you've got long arms it shouldn't be a problem. I've got a pan like this:
