Why do you think you need to do this? The 370 runs remarkably cool from a water temp perspective. Without instrumentation you might not know this.
Typical 180 degree temps are normal under regular driving. The fans kick on at 212 degrees, and off at 202. Based on other emissions cars this is pretty darned cool. There is no need to put a lower temp stat in. Without the ability to adjust fan kick in and % of speed numbers, this will be a waste of time..
