Options? I keep looking at the Gias low max and they look great, but no sure of anyone (or place) in Houston that has one.
For the Gias and Stradia seats, the limit for a comfortable fit seems to be about a 36" waist. Each car is different in terms of the overall drop over OEM, depending on clearances. I'm not sure what the difference is in the 370z but I'd assume that it's 1-2" under stock at the least.

The Brides are generally the best option because of the quality for the price. Recaros are another option as well.

If you can't find a local place that has the seats, you could try going to a car show. You're almost guaranteed to find one of the Brides there. I'm sure they won't mind if you take a quick sit in their car.
