Has to be off, no question. You'll get used to controlling the car while sliding around, that comes with experience.

One of the common mistakes that novices make is that when the car starts to slide they lift off the gas, this causes 2 problems. 1) It creates a sudden weight transfer fowards, causing your to lose grip in the rear, which was obviously already in short supply because you were sliding, and 2) if the slide was a power slide (you were spinning the tires) lifting off will cause you to suddenly regain traction causing the car to more than likely snap back in the opposite direction. You will learn to modulate the throttle in order to modulate the rear traction and allow grip to come back progressively.
